What is your favorite part about Pad Thai? The peanut sauce! I was once asked, “How can you eat raw kale?”. My answer, “The secret is in the salad dressing”. If you think about it, the noodles in Pad Thai are just an empty, starchy delivery system for the peanut sauce. Change your delivery system to raw vegetables and it is just as tasty and so much healthier. The raw vegetables contain all the vitamins, minerals, enzymes that keep you vibrant and your digestive system happy. This sauce/dressing can be used either hot or cold. If you prefer it over noodles, go for it. I like to put it over a mixed-salad of my favorite raw veggies and/or tofu.  This dressing is so decadent tasting it makes anything you put it on taste like a super treat. Enjoy! Again the measurements are estimations. Every batch I make comes out a little different, as I don’t measure. Play with amounts to your desired taste:

2 Cups Coconut Milk (canned is fine)

1/3 Cup Raw Organic Apple Cider Vinegar

2/3 Cup Rice Wine Vinegar

1/4 Cup Sesame Seed Oil

½ Cup Organic Sugar-Free Peanut Butter (check the ingredients of your peanut butter – make sure it DOES NOT contain gelatin)

1/4 Cup Gluten-Free Tamari Sauce (Soy Sauce can be used if you’re desperate)

1/4 Cup Coconut Oil

1/4 Cup Organic Olive Oil

1 teaspoon Tabasco Sauce (or 1/4 teaspoon ground cayenne pepper – optional, to taste)

½ teaspoon Ground Ginger Powder

2 Tablespoons Black Sesame Seeds (white sesame seeds can be substituted)

Combine all ingredients into a stainless steel pot and put on the very lowest of heat – just enough that the peanut butter melts when whisked. As soon as the peanut butter is melded with the rest of the ingredients to a smooth consistency, take off of heat. Allow to cool to luke-warm temperature and put in glass jar. Add the following ingredients:

1/4 Cup Diced Raw Onion

3 Cloves Diced Raw Garlic

Freshly Ground Black Pepper

Put lid on jar and shake it up – put your hips into it! Serve with compassion, love and gratitude knowing you are eating healthy while tasting like you’re indulging. You always have a choice. Treat your body like the temple of light it is…and you shall shine.
